Tawa Masala Pomfret Restaurant Style -2 Ways Marination Recipes

Pomfret are the most popular, sumptuous and edible fish available in the market and also fetch the highest price from buyers. Its clean white appearance, firmness of flesh and flavor makes it a good substitute over any bone-in fishes in the market. And what’s more? It’s the cooking recipes of this particular fish which is extremely easy, simple and satisfying. You can literally toss this fish in a mouth watering curry rich with spices or make a perfect marination and grill them in the oven. Whatever way you choose to cook the Pomfret, the end result is always heavenly satisfying. In today’s BonGappetit’s blog post , we are sharing two tempting and mouthwatering Pomfret Marination Recipes for you so that you can try this at your home and get some variety on your plate to sate your fishy cravings with minimal ingredients.

*Main Ingredients*

1- Way Marination Ingredients :

Mace (Javatri)1

Cinnamon Stick1 medium
Cloves4-5
Dried Fenugreek leaves (Kasuri Methi)1 tbsp
Ginger1 inch piece
Garlic Cloves6-8
Green Chilies1-2
Lemon Juice3-4 tbsp
Curd1 teacup
Turmeric Powder1 tbsp
Kashmiri Red Chili Powder1 tbsp
Tandoori Masala1 tbsp
Salt1 tsp/As Per Taste
Mustard Oil1/2 tsp
Gram Flour (Baisan)1 tbsp
Fresh Coriander (Chopped)For Garnish
Charcoal (Koyla) + Ghee1 small piece
*tsp-teaspoon; tbsp-tablespoon*

How to Marinate/Cook:

  • Make incisions on both side of the pomfrets and place on a plate.
  • In a mixer jar, add cumin seeds, nutmeg, mace, black peppercorns, cloves, cinnamon stick, coriander seeds, carom seeds, dried fenugreek leaves, ginger, garlic cloves, green chili and blend well to a thick paste.
  • Squeeze lemon juice, sprinkle turmeric powder, salt, red chili powder, 2 tbsp of blended paste. Rub evenly on both sides and marinate for 30 minutes in the refrigerator.
  • In a fresh bowl add curd/yogurt, remaining blended paste, 1/2 tsp mustard oil, tandoori masala, gram flour and whisk well.
  • Remove the marinated fish from the refrigerator and add spiced curd mixture and rub evenly on both sides.
  • Smoke the marinated fish on burning charcoal and set aside for 20 minutes.
  • On a grill pan, add butter and place the pomfret fish on the tawa/pan.
  • Fry the pomfret fish for 8-10 minutes each side over a medium-high flame while basting with cooking oil or butter.
  • Garnish with lemon slices, fresh coriander, ring onions & serve!

2- Way Marination Ingredients

Red Chili Powder1 tsp
Turmeric Powder1 tbsp
Tandoori Masala1 tbsp
Black Pepper Powder1 pinch
Ginger Paste1 tbsp
Garlic Paste1 tbsp
Lemon Juice3-4 tbsp
Red Chili Paste1 tbsp
Salt1 tsp/As Per Taste
Vegetable Oil1 tbsp
ButterTo Cook
*tbsp-tablespoon; tsp-teaspoon*

How To Marinate/Cook:

  • Make incisions cuts on both side of the pomfrets and place on a plate.
  • Sprinkle salt, drizzle 1 tablespoon lemon juice and add ½ teaspoon red chili powder, turmeric powder, ginger paste, garlic paste, tandoori masala powder, black pepper powder, red chili paste, curd, vegetable oil and salt. Mix and Marinade, rub and coat well on both sides. Refrigerate to marinade for 1 hour.
  • Heat some butter on a non-stick tawa. Place the marinated pomfrets and shallow-fry till evenly done from both sides and the fish is fully cooked. Transfer on a serving platter.
  • Garnish with coriander leaves, ring onions and serve hot with lemon slices.
